{Fit in 40}:: Green Silk Smoothie

I’ll have to go back and post more about my 40 day fast…  I realized that the last few days were completely neglected here.  I have made some interesting discoveries about my body, but those are for another post.  It all amounted to my decision that sticking to juicing daily – just for breakfast time, or for brekky and snack – is absolutely a habit I don’t want to let go of.  At least not for the foreseeable future.

So I was scrounging around for something to make a smoothie with this morning before Mass and came up with this one, which we are going to call Green Silk.  It is absolutely fabulous.  I promise.  It’s loaded with potassium, which is perfect for days when you’re planning to be working hard or in the heat.

The Green-Eyed Girl juice is something I whipped up yesterday morning, while getting ready to take the tribe out for our family birthday celebration in Boston.  I gave Brian a glass of it to try and he is a fan.  It’s amazing!

Green Silk Smoothie

  • 3 Granny Smith apples
  • 2” chunk ginger
  • 2 ripe avocados, pitted and scooped
  • 1 banana, peeled
  • 1 lime, squeezed
  • 1.5 c seltzer

Run your apples and ginger through the juicer.  Pour the juice and all of the other ingredients into your blender and whiz until liquified.  You’ll have a beautiful pale green, creamy, sweet and filling smoothie.  It is gorgeous in every way.  Enjoy!  Makes two really generous smoothies.

Green-Eyed Girl Juice

  • 10 oz spinach
  • 4 Granny Smith apples
  • 4-6 carrots
  • 1 bunch mint
  • 2” chunk ginger
  • water or seltzer

Run all of the fruits and veggies through the juicer and add water.  The carrots make this juice a little more substantial, almost creamy tasting.  And I’ve discovered that they hold the juice together, too – no separation as with watery juices.  Marvelous!  Makes enough for two grown-ups.
