Pumpkin Streusel Muffins

Pumpkin Muffins::

3 1/3 c. flour

3c. organic sugar

2 tsp. baking soda

1 1/2 tsp. Kosher salt

1 tsp. cinnamon

1 tsp. nutmeg

1/4 tsp. ginger

1 c. oil

4 eggs, lightly beaten

2/3 c. water

2 c. pumpkin puree

Preheat oven to 350F.  Oil 2 muffin tins.  Mix dry ingredients and wet ingredients separately.  Pour wet ingredients into dry, stirring until there is no dry mix remaining.  DO NOT overmix.  Pour batter into muffin tins and top with streusel.  Bake 20-25 minutes.

This recipe would also be delicious with the addition of 1 c. fresh cranberries, chopped and folded into the batter!

Streusel::

2/3 c. brown sugar

1/2 c. old fashioned oats

3/4 c. chopped pecans or walnuts

1/4 c. butter, cubed

Use a pastry blender, two forks or two knives to combine ingredients.  Mixture should be pea-sized crumbles.
