Recipes
Just a note about the recipes you’ll find here. You will notice that the recipes will feed quite a crowd, they were developed for our large family. If your family is smaller, you’ll want to cut them down by enough to feed your family. And if your family is larger than our – you are very blessed! You’ll want to make the recipes a tad bigger.
Many recipes have been adapted from comfort food favourites to use real food ingredients. We favour organic (real organic, please), homegrown/prepared ingredients. We tend to emphasize good, clean proteins and plenty of vegetables. Whenever possible, we try to combine whole grains and legumes for inexpensive, high-quality complete proteins. Soups and home-baked breads figure largely in our family’s diet, too. We are inspired by the diet followed by Trappist communities – largely vegetarian, but because we have different nutritional needs than celibate men and women, we include more eggs, dairy, and meat. The goal is whole, simple food prepared well and prayerfully.
Finally, we prefer to eat more heavily at breakfast (very UN-Trappist), a big meal at luncheon, and a smaller, lighter meal in the evening. The character of the meal changes as the day wears on. We try to choose recipes to balance carbohydrates and proteins at breakfast, helping to bring up the blood sugar from the overnight fast and to keep it there. Brian and I have found over nearly 2 decades of parenthood that when children eat a protein-rich breakfast, they are better behaved and better focused. We try to eat a midday meal with a good protein and plenty of vegetables. Our last meal of the day is where we are more likely to have more carbohydrates since they help to make the body sleepy.
